Balasun is one of the older Darjeeling gardens and has been producing tea since 1871. The garden itself is hilly, ranging from 365 to 1375 meters, and includes the wide valley where the Balasun river runs (the estate is named for the river). The estate also grows oranges, ginger, and cardamom, and is part of a push in Darjeeling toward biodiversity and sustainable farming—they’re Utz/Rainforest, and Fair-trade certified. This delightful variety is called “Himalayan Musk” and offers bright, floral aromas and brighter astringency.
How to Brew this Tea:
Amount of Tea per 6 oz water – 1 teaspoon
Water Temperature - 195°-200º max.
Time of Steeping - 3-4 minutes, second steep at 4-5 min.
