Ti Kuan Yin: The Iron Goddess of Mercy (Gong Fu)

Ti Kuan Yin, or Iron Goddess of Mercy, is one of the world’s most famous varietals of tea, grown in the Wuyi Mountains of China. Discovered in the early 19th century, it was named after the Chinese Bodhisattva, Guanyin, goddess of compassion. True to its name, each infusion of this tea offers love and sanctuary, with beautifully delicate floral notes in its lightly-oxidized state, and warm, nutty sweetness in higher-oxidized teas. It is because of its broad, complex flavor profile that it is only produced as an oolong tea, a process which uses time and patience to extract the best flavors out of each tea leaf.
