Tung Ting, or Dong Ding oolong tea translates to “Frozen Summit” or “Icy Peak.” It is named for the mountains it is grown in. This variety is grown in the Zhushan (Zhúzi - Bamboo, Shan - Mountain) township of Nantou County, the home to some of the most prestigious Taiwanese teas. Enjoy this rich, complex varietal 

This competition, high grade oolong tea is grown at an altitude of over 1800 feet. Harvested by hand, only the top two to three leaves are plucked. They are rolled into tight tea balls and dried before being lightly roasted to halt oxidation and impart a distinct, toasted quality. The final result is a lightly oxidized (15-20%), complex selection with mild caffeine.

A pale yellow liquor introduces nutty aromas. The palate is complex, rich, bright, and creamy, ending with a smooth, floral finish. Top notes of toasted umami give way to mid tones of lemon zest, resolving with a delicate mention of jasmine.
