Ti Kuan Yin “Iron Goddess of Mercy” is China’s most celebrated Oolong, named for Kuan Yin, the mythical Goddess of Compassion. It is extremely time-consuming to produce and involves more than eight different procedures to process the tea leaves after harvesting. It is a tightly rolled Oolong; the leaves unfurl and release their glorious aromas and flavors ever-so-slowly. The brewed tea infusion is a brownish-green infusion with wafting aromatic tea essences and a full-bodied flavor and lingering aftertaste.
