Gaba oolong is produced by replacing oxygen with nitrogen to convert natural Glutamic Acid in the leaves to Gamma-Aminobutyric Acid (GABA). Gaba is a neurotransmitter that triggers feelings of warmth and comfort, giving this robust selection some of the most notable health benefits of tea. Fresh leaves are picked during the spring harvest in Nantou County, Taiwan, placed in a pressurized barrel to remove oxygen, infused with nitrogen for 6-10 hours. The leaves are then lightly roasted to halt oxidization, rolled, dried, and compressed. Then are then re-rolled, compressed, dried, then finally roasted. The final result is a rich, complex, highly oxidized oolong tea with an average of 200 mg of GABA per 100g of dry weight.

A light amber cup has robust aromas of woodiness and raisin. The palate is rich, with notes of muscatal, ending with a bright, lingering finish. Top notes of apricot blend with mid tones of raisin completed by hints of citrus.

Steep Time: 3-5 minutes
